Tahitian Pineapple Infusion

1 or 2 ripe pineapples, cut into bite size pieces
1 part coconut rum
2 parts vanilla run

Use enough liquid to cover pineapple. I like to make sure my fruit floats. Place all ingredients in infuser or air tight container and let stand 2 – 3 weeks.

Serve martini style over ice or mix with various fruit juices. You can freeze pineapple bites to blend into other frozen delights.

Will keep for several weeks in air tight container. Can refrigerate to keep cool.
